Chinese Etymology Around 674 C.E., borrowed from Sanskrit पालङ्क (pālaṅka), पालङ्क्य (pālaṅkya), पालक्या (pālakyā, “Indian spinach (Beta bengalensis)”), possibly via some ancient language in modern-day Nepal. Compare modern Nepali पालुङ्गो (pāluṅgo, “spinach”), Assamese পালেং (paleṅ), Bengali পালং (paloṅ, “spinach (Spinacia oleracea)”). Possibly the source of 菠菜 (bōcài). Alternative etymology relates this word to the name of an ancient kingdom in India. Examples of such suggestions include: Wei Xuan of the Tang Dynasty, who remarked that: 豈非頗稜國將來，而語訛為菠稜耶？ [MSC, trad.]岂非颇棱国将来，而语讹为菠棱耶？ [MSC, simp.]Qǐ fēi Pōléng Guó jiāng lái, ér yǔ é wèi bōléng yē? 菠菜（學名：Spinacia oleracea），又名菠薐、鹦鹉菜、红根菜及飛龍菜，是莧科菠菜属的一年或二年生草本植物。性喜冷凉气候，耐寒性强，适于沙壤或粘土壤生长，根和叶子可以食用。菠菜于7世纪左右由尼泊尔传入中国现已是一道家常菜。菠菜常用来煲汤，凉拌，单炒，和配荤菜合炒或火鍋垫盘。中国的菠菜比较小，有时整棵连根一起凉拌，红色的根和绿色的叶子，互有點綴之用。菠菜一年四季都可以收获，通常春天的菠菜比较嫩小，适合凉拌，而秋天的粗大，比较适合熟食。但是现在有很多温室培养的菠菜，一年到头都是一样的。
